In the 19th Century, beans shipped from India to Europe were stored below the water line where the humidity reduced their acidity, creating a lovely smooth, nutty taste. That’s why they recreate the process today by exposing these beans to harsh, monsoon winds off the Malabar coast for three to four months. The beans swell, and lose their acidity, which gives them their heavy body and magnificently mellow flavour.
